Ingredients

  • 1 ¼ cups milk
  • 1 large egg
  • 2 tbsp melted butter or vegetable oil

Instructions
 

  • Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • Combine Wet Ingredients: In a separate bowl, beat the egg and whisk in the milk, melted butter, and vanilla extract.
  • Make the Batter: Add the wet ingredients to the dry ingredients and stir just until combined. Do not overmix—some lumps are okay.
  • Rest the Batter: Let the batter rest for 5 minutes to help it thicken and rise better during cooking.
  • Heat the Pan: Preheat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  • Cook the Pancakes: Pour about 1/4 cup of batter per pancake onto the skillet. Cook for 2–3 minutes, or until bubbles form on the surface and the edges begin to set. Flip and cook another 1–2 minutes until golden brown.
