The cookies are soft and chewy because they are made with oats, brown sugar and plenty of warming spices. You can easily make this classic oatmeal cookie and it’s wonderful with or without raisins, chocolate chips or nuts for snacks or dessert.

- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- ½ cup granulated sugar
- 2 large eggs
- 1 tbsp vanilla extract
- 1 ½ cups purpose flour
- 1 tbsp baking soda
- 1 tbsp ground cinnamon
- ½ tbsp salt
- 3 rolled oats
Heat your oven to 350°F (175°C) before proceeding. Cover your baking sheet with parchment paper.
Put the butter, brown sugar and granulated sugar in a big bowl and mix the mixture until it looks fluffy.
Add the eggs one by one and stir before you add the vanilla extract.
In a different bowl, whisk the flour, baking soda, cinnamon and salt together.
Pour in the dry ingredients a bit at a time and stir until you have a smooth batter.
Add the oats and raisins, if using or opt for chocolate chips instead.
Drop separate spoonfuls of dough onto the baking sheet, so every cookie has enough space around it.
Between 10 to 12 minutes of baking, the border of the bread should be golden brown
Once you’ve baked the cookies, wait 2 minutes on the pan, then lift them onto a cooling rack.
For about a week, enjoy these warm or keep in an airtight container.
