Ingredients
  

  • 3 cups cooked rice
  • 2 large eggs
  • 2 tbsp oil
  • ½ cup chopped onion
  • ½ cup diced carrots
  • ½ cup green peas
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • Salt and pepper to taste
  • 2 green onions, chopped

Instructions
 

  • The first task is to gather the ingredients: Check all your ingredients before you start to cook. Day-old rice that isn’t hot will give the best results. Kitchen-fresh rice does not give you the texture you want.
  • Cook your Eggs: Put 1 tablespoon of oil into a wok or large skillet and heat it over medium-high heat. Beat the eggs in a dish and after that, add them to the heated pan. Scrambled the eggs until done but not very firm, then remove them from the pan and set them aside.
  • mix the vegetables over high heat: Then, pour the remaining oil into the same pan. Saute the onions and carrots together for 2-3 minutes until they grow softer. After that, add chopped peas and any optional garlic or ginger. Keep cooking for 1-2 minutes.
  • At this point, you should cook the rice too: Boil the flour mixture at top temperature for at least 3 minutes. Pour the chilled rice into the pan and use your spatula to break any groupings. Stir-fry for 3 to 5 minutes, cooking the rice until it turns slightly crispy.
  • add in the eggs and seasoning: Scramble the eggs back into the pan. Now, combine soy sauce, sesame oil, salt and pepper. Make sure all the rice is covered evenly by the spices.

Notes

Use rice from yesterday – Cold rice creates a better consistency and won’t go mushy.
Get all items chopped and pre-cooked before starting to cook.
Using a high temperature will help the food get crispy and cook quickly.
Stick to a light coating of soy sauce, so the rice doesn’t get too soggy. Use the product in small amounts each time.
You can change it – For more protein, include cooked chicken, shrimp or tofu in the stir-fry.
