Equipment

  • 1 Large skillet or saucepan
  • 1 Cutting board and knife
  • 1 Mixing bowl
  • 1 Measuring spoons and cups
  • 1 Wooden spoon or spatula

Ingredients
  

For the Curry Base:

  • 2 tbsp cooking oil or ghee
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1 inch piece of ginger, minced
  • 2 medium tomatoes, pureed

For the Chicken:

  • 1 ½ pounds chicken (bone-in or boneless), cut into pieces
  • 1 tbsp turmeric powder
  • 1 tbsp cumin powder
  • 1 tbsp coriander powder
  • 1 tbsp garam masala
  • Salt to taste

For the Sauce:

  • 1 cup coconut milk or heavy cream
  • 1 cup water or chicken stock

Garnish:

  • Fresh cilantro leaves, chopped
  • Lemon wedges

Instructions
 

  • Marinating ChickenPut chicken pieces in a mixing bowl with turmeric powder and a pinch of salt and mix well.Blend and allow it to marinate at least 10 minutes as you prepare the rest of the ingredients.
  • Make Curry BaseHeat oil or ghee in a big skillet on medium flame.Add sliced onions and saut walks till golden brown about 5-7 mins.Add garlic and ginger and cook 1-2 min until fragrant.Add pureed tomatoes, and cook until the mixture thickens and oil starts to separate, 5 minutes.
  • SpicesReduce the heat and add the cumin powder, coriander powder, garam masala and chili powder (optional).Stir until the spices are toasted and their aroma released.
  • Bake the ChickenPlace the marinated chicken in the skillet and sprinkle over the spice mixture.cook 5-7 minutes, stirring occasionally, until chicken begins to brown.
  • LiquidAdd coconut milk or cream and water or chicken stock.Mix with a spoon and boil lightly.Reduce the heat, cover and simmer for 20 minutes, or until the chicken is completely cooked and tender.
  • SeasoningCheck the Curry taste and add salt and spices according to your taste.In case the sauce is thick, add some drop of water.
  • Garnish and ServeTake the skillet off the heat and allow the curry to rest 5 minutes.Warm weather with fresh cilantro leaves and serve with rice, naan or roti

Notes

Fresh Spices: Freshly ground spices area also better in tastying the dish.
Marinate to Taste: Allow the chicken to marinate to be more flavored.
Ingredient Variations: To make it different, add some vegetables such as potatoes, peas or spinach.
Tame the Flame: Add chili powder according to your spice level.
Make It Ahead: The curry tastes wonderful when prepared in advance and warmed up.
