For the Curry Base:
- 2 tbsp cooking oil or ghee
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 1 inch piece of ginger, minced
- 2 medium tomatoes, pureed
For the Chicken:
- 1 ½ pounds chicken (bone-in or boneless), cut into pieces
- 1 tbsp turmeric powder
- 1 tbsp cumin powder
- 1 tbsp coriander powder
- 1 tbsp garam masala
- Salt to taste
For the Sauce:
- 1 cup coconut milk or heavy cream
- 1 cup water or chicken stock
Garnish:
- Fresh cilantro leaves, chopped
- Lemon wedges
Marinating ChickenPut chicken pieces in a mixing bowl with turmeric powder and a pinch of salt and mix well.Blend and allow it to marinate at least 10 minutes as you prepare the rest of the ingredients.
Make Curry BaseHeat oil or ghee in a big skillet on medium flame.Add sliced onions and saut walks till golden brown about 5-7 mins.Add garlic and ginger and cook 1-2 min until fragrant.Add pureed tomatoes, and cook until the mixture thickens and oil starts to separate, 5 minutes.
SpicesReduce the heat and add the cumin powder, coriander powder, garam masala and chili powder (optional).Stir until the spices are toasted and their aroma released.
Bake the ChickenPlace the marinated chicken in the skillet and sprinkle over the spice mixture.cook 5-7 minutes, stirring occasionally, until chicken begins to brown.
LiquidAdd coconut milk or cream and water or chicken stock.Mix with a spoon and boil lightly.Reduce the heat, cover and simmer for 20 minutes, or until the chicken is completely cooked and tender.
SeasoningCheck the Curry taste and add salt and spices according to your taste.In case the sauce is thick, add some drop of water.
Garnish and ServeTake the skillet off the heat and allow the curry to rest 5 minutes.Warm weather with fresh cilantro leaves and serve with rice, naan or roti
